  • 1 large orange bell pepper
  • 1 red onion
  • 1 medium zucchini
  • 1 tablespoon avocado oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon kosher salt
  • Pinch of black pepper
  • 1 package chicken sausage (12 oz)

Instructions

  1. Prepare the veggies by cutting them into bite-sized pieces and placing them in a large bowl.
  2. In a separate bowl, combine garlic powder, onion powder, Italian seasoning, kosher salt, and black pepper. Mix well and add to the veggies, tossing to coat.
  3. Slice the chicken sausage into rounds about ¾ inch thick and add to the bowl with the veggies. Mix thoroughly.
  4. Preheat the air fryer to 390°F (if necessary). Lightly spray the basket with cooking spray. Spread the mixture evenly in the basket.
  5. Cook for about 10 minutes, flipping halfway through until everything is cooked through and slightly crispy.
  6. Serve warm over cauliflower rice or brown rice if desired.
