  • 1 can (15 ounces) pumpkin purée
  • 2 cloves garlic, minced
  • ½ lemon, juiced
  • ⅓ cup tahini
  • 1 tablespoon maple syrup
  • 1 teaspoon kosher salt
  • 1 teaspoon ground cumin
  • ¾ teaspoon ground cinnamon
  • Pinch cayenne pepper
  • ¼ cup olive oil
  • ¼ cup ice water

Instructions

  1. In a food processor, combine chickpeas, pumpkin purée, and garlic. Pulse until broken down.
  2. Add lemon juice, tahini, maple syrup, salt, cumin, cinnamon, and cayenne pepper. With the processor running, slowly add olive oil until emulsified.
  3. Blend for 2–3 minutes while adding ice water gradually until your desired smoothness is achieved.
  4. Transfer to a bowl and garnish with olive oil and toppings of choice. Serve with pita chips or sliced apples.
