  • 1 garlic clove, minced
  • 200g ground chicken
  • 1 tsp curry powder
  • 1 ½ tbsp red curry paste
  • 1 tsp dark soy sauce
  • 1 ½ cups low sodium chicken broth
  • ¾ cup coconut milk
  • 2 tbsp cider vinegar
  • 3 tbsp peanut butter
  • 2 instant ramen cakes (discard seasoning)
  • 2 handfuls baby spinach
  • Chopped peanuts and coriander for garnish

Instructions

  1. Heat oil in a skillet over high heat, sauté minced garlic until golden (about 20 seconds).
  2. Add ground chicken; cook for about 2 minutes until mostly cooked through.
  3. Stir in red curry paste (reserve some), curry powder, and dark soy sauce; cook until fragrant (about a minute).
  4. Add remaining red curry paste directly to the pan; stir for another 30 seconds.
  5. Pour in chicken broth; bring to a simmer for one minute.
  6. Push aside chicken and squish in noodle cakes; let cook undisturbed for about 45 seconds.
  7. Flip noodles gently, then add coconut milk, peanut butter, and cider vinegar; mix well.
  8. Toss in baby spinach until wilted (about 30 seconds).
  9. Serve hot, garnished with chopped peanuts, cilantro, and Sriracha if desired.
