  • ½ cup unsalted butter, softened but still cool to touch
  • 1 cup light brown sugar
  • ½ cup apple butter
  • 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 1 cup powdered sugar
  • 1 tablespoon apple butter
  • 23 tablespoons milk or heavy cream, room temperature

Instructions

  1. In a mixing bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt. Set aside.
  2. In a stand mixer, cream together softened butter, brown sugar, and apple butter until smooth. Add egg yolk and vanilla; mix well.
  3. Gradually combine dry ingredients with the wet mixture until just blended. Chill dough for 1-2 hours.
  4. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  5. Scoop dough onto the sheet, spacing them apart. Bake for 10-12 minutes until edges are set.
  6. For the glaze, mix powdered sugar with apple butter and milk until smooth. Dip cooled cookies in glaze and allow to set.
