  • For the Spiced Buttercream Frosting: 1/2 cup butter, softened
  • 12 tbsp water, milk, or more apple cider
  • 1 tsp vanilla
  • 1/2 tsp cinnamon
  • pinch of nutmeg
  • 2 cups powdered sugar

Instructions

  1. 1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. 2. In one bowl, whisk together oat flour, baking powder, salt, and spices.
  3. 3. In another bowl, mix melted butter with brown sugar, applesauce, apple cider, vanilla extract, and eggs until smooth.
  4. 4. Combine wet and dry ingredients gently until just mixed.
  5. 5. Fill cupcake liners about two-thirds full and bake for 20-22 minutes until a toothpick comes out clean.
  6. 6. Cool completely before frosting with spiced buttercream made from softened butter mixed with powdered sugar and spices.
