  • 2 cups all-purpose flour
  • 1 tablespoon apple pie spice
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ cup melted butter (for coating)
  • ½ cup sugar (for coating)
  • 1 tablespoon cinnamon (for coating)

Instructions

  1. Reduce apple cider in a saucepan over medium heat until halved (20–30 minutes). Let cool.
  2. Preheat oven to 350°F and grease a 9×5 loaf pan.
  3. Cream butter and brown sugar in a bowl until light and fluffy.
  4. Add egg and vanilla; mix until combined.
  5. Stir in dry ingredients along with cooled cider until just combined.
  6. Pour batter into prepared pan and bake for about 50 minutes, testing for doneness with a toothpick.
  7. Cool in the pan for 15 minutes before transferring to a wire rack.
  8. Brush with melted butter and sprinkle cinnamon-sugar mixture over the top.
