  • 30 g light brown soft sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp mixed spice
  • 1 tsp cornflour (cornstarch)
  • 10 g unsalted butter
  • 8 g light brown soft sugar
  • 17 g plain flour
  • 1/8 tsp cinnamon
  • 175 g softened unsalted butter
  • 175 g light brown soft sugar
  • 3 large eggs
  • 175 g self-raising flour
  • 1/2 tsp cinnamon
  • 1/4 tsp mixed spice
  • 175 g softened unsalted butter
  • 350 g icing sugar
  • 1 1/2 tsp cinnamon
  • 23 tbsp milk

Instructions

  1. Prepare the apple filling by peeling, coring, and chopping the apples. Cook them over low heat with light brown sugar, cornflour, cinnamon, and mixed spice for about 10-15 minutes until tender.
  2. Make the crumble topping by mixing flour, sugar, and cinnamon; rub in softened butter until it resembles breadcrumbs. Bake on a lined tray at 180C (375F) for 10-15 minutes until golden.
  3. For the cupcake batter, cream softened butter and light brown sugar until smooth. Add eggs one at a time, then fold in self-raising flour and spices. Divide batter into cases and bake at 160C (350F) for 20-25 minutes.
  4. Once cooled, create holes in the center of each cupcake to fill with apple mixture. Frost with buttery icing made from softened butter, icing sugar, cinnamon, and milk.
  5. Finish with leftover apple filling and sprinkle crumble topping on each cupcake.
