Ingredients

  • 2 kg apples (Fuji, Royal Gala, or Pink Lady)
  • 150 g granulated sugar
  • 1 tsp salt
  • 1 tbsp cornstarch
  • 4 egg yolks
  • 600 ml milk (whole or plant-based)
  • 50 g granulated sugar (for custard)
  • 2 tsp vanilla bean paste

Instructions

  1. Peel and thinly slice the apples. Toss with sugar, salt, and cornstarch in a bowl.
  2. Cook the apple mixture in a skillet over medium heat until soft but not mushy. Set aside to cool.
  3. In a bowl, whisk egg yolks, cornstarch, sugar, and salt until smooth.
  4. Warm milk in a saucepan until steaming; gradually whisk into the egg mixture. Return to saucepan.
  5. Cook over low heat while stirring until thickened. Stir in vanilla bean paste.
  6. In a mold or serving dish, layer half of the apple filling followed by half of the custard; repeat layers.
  7. Cool completely before refrigerating for at least one hour. Slice and serve.
