  • 300 g all-purpose flour
  • 60 g granulated sugar
  • 1 tsp salt
  • 220 g cold unsalted butter (cubed)
  • 110 g ice water
  • 1 kg apples (Pink Lady, Royal Gala, or Fuji)
  • 75 g unsalted butter (for filling)
  • 190 g brown sugar
  • 1¼ tsp ground cinnamon
  • 1¼ tbsp cornstarch
  • ¼ tsp salt
  • 2½ tbsp water
  • 5 tbsp almond flour (or other finely ground nuts/breadcrumbs)
  • 1 egg
  • 1 tbsp water
  • 3 tbsp brown sugar
  • Vanilla ice cream (to serve)

Instructions

  1. For the crust, combine flour, sugar, and salt in a large bowl. Mix in cold butter until it resembles coarse crumbs. Gradually add ice-cold water until the dough forms. Chill while preparing the filling.
  2. For the filling, peel and slice apples. In a pan over medium heat, melt butter and add apple slices, brown sugar, cinnamon, and salt. Cook until softened. Stir in dissolved cornstarch to thicken.
  3. Roll out half of the chilled dough for the bottom crust and place it in a pie dish. Fill with the apple mixture and roll out remaining dough for the top crust, cutting slits for ventilation.
  4. Brush top with a mixture of egg and water; sprinkle brown sugar on top.
  5. Preheat oven to 180°C (350°F) and bake for about 80 minutes until golden brown and bubbly.
