  • 12 thick-cut slices of brioche bread (or rolls)
  • 1 3/4 lb apples (peeled and diced)
  • 4 tbsp salted butter
  • 1 cup milk
  • 1 cup heavy cream
  • 4 eggs
  • 3/4 cup brown sugar
  • 1/4 cup + 3 tbsp granulated sugar
  • 2 1/2 tbsp all-purpose flour
  • 1 tsp apple pie spice
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 cup water
  • Optional: turbinado sugar for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your baking dish.
  2. In a saucepan over medium heat, melt butter and mix in flour and apple pie spice. Add brown sugar, diced apples, and water; cook until apples are soft.
  3. In another saucepan, combine milk, cream, butter, sugars, salt, vanilla extract, cinnamon, and optional spices over low heat until melted. Remove from heat and whisk in eggs one at a time.
  4. Cube the brioche and layer it in the baking dish with the apple mixture. Pour custard over everything.
  5. Bake for 35-40 minutes until golden brown with a slight wobble in the center.
