  • 1/2 cup plus 2 tablespoons sugar (divided)
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 3 medium apples (peeled and chopped)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 3/4 cup flour
  • 3/4 cup firmly packed brown sugar
  • 1/2 cup quick cook oats

Instructions

  1. Preheat your oven to 350°F (175°C). In a food processor, combine flour, brown sugar, and cold butter until crumbly. Press into a greased 13×9 inch pan lined with parchment paper and bake for 15 minutes.
  2. In a bowl, beat softened cream cheese until fluffy. Add half a cup of sugar and vanilla; mix until smooth. Incorporate eggs one at a time.
  3. Toss chopped apples with cinnamon, nutmeg, and remaining sugar. Spread cheesecake filling over the crust and top with apple mixture.
  4. For the crumble topping, blend flour, brown sugar, oats, and cold butter until crumbly; sprinkle over apples.
  5. Bake for 25-30 minutes until set but slightly jiggly in the center. Let cool before refrigerating to set.
