  • 1 bundle scallions, thinly sliced (divided)
  • 10 cups water
  • 8 oz dried ramen noodles or curly noodles
  • 1 cup carrot, cut into thin matchsticks
  • 1/4 cup black rice vinegar
  • 1/4 cup soy sauce
  • 2 tbsp toasted sesame oil

Instructions

  1. Season chicken thighs with salt and pepper. In a large pot over medium heat, add a splash of water if needed and cook the seasoned chicken until golden brown on both sides (about 5-7 minutes per side).
  2. Add garlic and ginger to the pot; sauté for 2-3 minutes until fragrant.
  3. Pour in water and add the white parts of the scallions. Bring to a gentle boil, then reduce heat to simmer for about 10-15 minutes.
  4. Remove cooked chicken, shred into bite-sized pieces, and return to pot along with ramen noodles and carrots. Cook noodles according to package instructions.
