  • 1 tablespoon extra virgin olive oil
  • Kosher salt and pepper to taste
  • 2 sheets frozen puff pastry (thawed)
  • 8 ounces Gruyere cheese (shredded)
  • 12 slices turkey
  • 1 egg (beaten)

Instructions

  1. Preheat oven to 425°F and line a sheet pan with parchment paper.
  2. Roll out thawed puff pastry on a floured surface into a rectangle and cut into six squares.
  3. Toss asparagus with olive oil, salt, and pepper in a bowl.
  4. For each bundle: Place turkey on pastry square, add 3-4 asparagus stalks, and top with cheese.
  5. Fold opposite corners of pastry over the filling and pinch to seal. Brush with beaten egg.
  6. Bake for 12-15 minutes until golden brown and puffed.
