- 2 pounds beef chuck, cut into 1-inch cubes
- 3 tablespoons olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 cups carrots, sliced
- 2 cups potatoes, diced
- 1 cup parsnips, diced
- 1 cup celery, diced
- 1 tablespoon tomato paste
- 2 teaspoons dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
- Heat olive oil in a large pot over medium-high heat. Sear beef cubes in batches until browned on all sides.
- Add diced onion and minced garlic to the pot. Sauté until translucent.
- Stir in tomato paste and cook for an additional minute.
- Deglaze the pot with a splash of beef broth, scraping up any browned bits.
- Return beef to the pot along with remaining broth and all vegetables.
- Season with thyme, rosemary, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat to low and cover. Simmer for about 2 hours or until beef is tender.
- Taste and adjust seasoning before serving hot.
