  • 3 cups butternut squash, peeled, seeded, cubed
  • 340 g Brussels sprouts, trimmed and halved
  • 225 g bow tie pasta
  • 340 g cooked chicken or turkey sausage
  • 5 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • ¼ teaspoon smoked paprika

Instructions

  1. Preheat oven to 200°C. Toss butternut squash with olive oil, salt, and pepper. Spread on a baking sheet and roast for 15-20 minutes until tender.
  2. Toss Brussels sprouts with olive oil, salt, and pepper on another baking sheet and roast for 20-30 minutes until crispy.
  3. Boil salted water in a large pot; cook bow tie pasta according to package instructions until al dente. Reserve some pasta water before draining.
  4. In a skillet over medium heat, sauté sliced sausage until browned. Remove from skillet.
  5. In the same skillet, sauté garlic until fragrant; add butter to melt. Mix in pasta along with salt, pepper, and smoked paprika.
  6. Combine roasted vegetables and sausage with the pasta; stir gently until well mixed.
