  • 12 large eggs
  • 2 ripe avocados
  • 3 tablespoons lime juice
  • 2 cloves garlic (minced)
  • 1/2 jalapeño (deseeded and minced)
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon kosher salt
  • 1/4 cup fresh cilantro (finely chopped)

Instructions

  1. Hard boil the eggs by placing them in a saucepan covered with an inch-and-a-half of water. Bring to a boil, then remove from heat and cover for about 18 minutes. Prepare an ice bath during this time.
  2. Once cooled, cut each egg in half lengthwise and scoop the yolks into a food processor. Add avocados, lime juice, garlic, jalapeño, cayenne pepper, and salt. Blend until smooth.
  3. Fold in cilantro for added flavor. Fill each egg white half generously with the creamy mixture using a spoon or piping bag.
  4. Garnish with additional cilantro and cayenne pepper before serving.
