  • 1 lb ground beef
  • 3 tablespoons chili powder
  • 1/2 poblano pepper, chopped
  • 2 stalks celery, chopped
  • 1 medium onion, minced
  • 2 tablespoons garlic, minced
  • 4 oz tomato paste
  • 1 (16 oz) can crushed tomatoes
  • 2 cans (15 oz each) dark red kidney beans, rinsed and drained
  • 1 can black beans, rinsed and drained

Instructions

  1. Heat a large stockpot over medium heat. Brown the ground beef until fully cooked.
  2. Add chopped poblano pepper, celery, onion, and garlic; sauté until tender.
  3. Stir in chili powder, crushed tomatoes, tomato paste, and BBQ sauces; simmer for 15 minutes.
  4. Incorporate beef broth and other liquids; bring to a gentle simmer for about 1.5 hours.
  5. Add kidney beans and black beans; warm through for another 30 minutes.
  6. Serve hot with your choice of garnishes.
