  • 2 beef tenderloins
  • 1 Tbsp olive oil
  • 2 Tbsp brown sugar
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt
  • ½ tsp dried thyme
  • ½ tsp onion powder
  • ½ tsp ground black pepper
  • ¼ cup cold salted butter (cut into squares)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix brown sugar, garlic powder, paprika, salt, thyme, onion powder, and black pepper to create the spice rub.
  3. Pat the beef tenderloins dry with paper towels and generously coat each with the spice rub.
  4. Heat olive oil in a large frying pan over medium-high heat. Sear each side of the beef for about 3-5 minutes until browned.
  5. Transfer the seared beef to a lined baking sheet or casserole dish. Top with squares of cold butter.
  6. Roast in the oven for about 30 minutes or until the internal temperature reaches 145°F (63°C). Cover loosely with foil halfway through cooking.
  7. Let rest for 10 minutes before slicing to allow juices to redistribute.
