  • 1 red bell pepper, diced
  • 1/2 small red onion, diced
  • 3 cloves minced garlic
  • 8 ounces feta cheese
  • 4 large eggs
  • 4 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon red pepper flakes
  • 1 cup chopped baby spinach
  • Chopped fresh basil or fresh chives (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In individual ramekins or a large baking dish, layer tomatoes, bell pepper, onion, garlic, and feta cheese. Drizzle with olive oil.
  3. Season with oregano, salt, thyme, black pepper, and red pepper flakes.
  4. Bake for 25 minutes until veggies are tender.
