  • 90 g whole milk
  • 1 tsp vanilla extract
  • 160 g all-purpose flour
  • 1 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 100 g blueberries (fresh or frozen) + 1 tbsp flour for dusting
  • For the streusel topping: 50 g all-purpose flour, 40 g granulated sugar, 25 g butter

Instructions

  1. Preheat your oven to 190°C (375°F) and prepare a muffin tin by greasing it or lining it with paper liners.
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy. Add the egg, sour cream, milk, and vanilla; mix until well combined.
  3. In another bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add dry ingredients to the wet mixture until just combined.
  4. Toss blueberries in flour and gently fold them into the batter.
  5. Prepare streusel topping by mixing flour, sugar, and butter until crumbly.
  6. Fill muffin cups with batter and sprinkle generously with streusel topping.
  7. Bake for about 20 minutes until golden brown. Cool for five minutes before transferring to a cooling rack.
