  • 3 ripe bananas, mashed
  • 1 cup granulated sugar
  • 3 teaspoons baking powder
  • ½ cup almond milk (or any milk)
  • 2 large eggs
  • Ground cinnamon

Instructions

  1. Preheat your oven to 350°F and grease a 9" x 13" baking dish.
  2. For the crumb topping, mix cold butter, flour, sugars, and cinnamon in a bowl until crumbly.
  3. In a separate bowl, whisk together flour, baking powder, cinnamon, and salt.
  4. In a stand mixer, cream softened butter with granulated sugar until fluffy. Add eggs, vanilla, and mashed bananas; mix until combined.
  5. Alternate adding the dry ingredients and almond milk until fully combined.
  6. Layer half of the batter in the prepared dish, sprinkle with crumb mixture, top with remaining batter, and add the rest of the crumbs on top.
  7. Bake for 50–55 minutes until golden brown.
