  • 12 lbs. fresh salmon
  • 2 tablespoons brown sugar
  • 2 teaspoons smoked paprika
  • 2 teaspoons onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon kosher salt
  • 2 tablespoons olive oil
  • 2 mangoes, diced
  • 1 avocado, diced
  • 1/4 cup minced cilantro
  • 1/4 cup minced red onion
  • 1/2 jalapeño, minced (optional)
  • 1 teaspoon honey
  • 2 tablespoons lime juice
  • 1 teaspoon lime zest
  • Salt to taste
  • 1 1/2 cups of rice

Instructions

  1. Prepare the salsa by mixing diced mangoes, avocado, minced cilantro, red onion, jalapeño, honey, lime juice, lime zest, and salt in a bowl.
  2. Cook rice according to package instructions.
  3. Preheat the oven to 475°F (or broil at 500°F).
  4. Mix brown sugar, smoked paprika, onion powder, garlic powder, chili powder, kosher salt, and olive oil into a paste and rub over the salmon.
  5. Bake salmon on a lined baking sheet for 6-12 minutes until cooked through.
  6. Serve by layering rice at the base of bowls topped with flaked salmon and generous spoonfuls of salsa.
