  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 10 oz enchilada sauce
  • 14.5 oz diced tomatoes, drained
  • 15 oz black beans, drained and rinsed
  • 8 corn tortillas
  • 2 cups shredded cheddar cheese
  • 2 cups shredded Monterey Jack cheese

Instructions

  1. Preheat oven to 375°F and grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, brown the ground beef with diced onion and minced garlic. Drain excess fat.
  3. Stir in enchilada sauce, diced tomatoes, black beans, cumin, chili powder, salt, and pepper; simmer for 5 minutes.
  4. Layer half of the corn tortillas at the bottom of the baking dish. Spread half of the beef mixture on top and sprinkle with half of both cheeses.
  5. Repeat layers with remaining tortillas, beef mixture, and cheese.
  6. Bake for approximately 25 minutes until bubbly and golden on top.
  7. Let rest for a few minutes before serving.
