  • 6 cups fresh spinach leaves
  • 1 cup fresh strawberries (sliced)
  • 1 cup fresh blueberries
  • 1/2 cup crumbled feta cheese
  • 1/2 cup pecans (toasted)
  • 1/4 cup red onion (thinly sliced)
  • 1/2 cup balsamic vinegar
  • 2 tbsp honey (optional)

Instructions

  1. In a large bowl, combine 6 cups of fresh spinach leaves with 1 cup of sliced strawberries, 1 cup of blueberries, 1/4 cup of thinly sliced red onion, and 1/2 cup of toasted pecans.
  2. Sprinkle 1/2 cup of crumbled feta over the top.
  3. For the balsamic glaze, heat 1/2 cup balsamic vinegar in a small saucepan over medium heat until reduced by half. Optionally stir in 2 tbsp honey after removing from heat.
  4. Drizzle the balsamic glaze over the salad just before serving for an extra flavor boost.
