  • 2 pounds stewing beef (chuck or round)
  • 1 large onion (diced)
  • 3 cloves garlic (minced)
  • 3 medium carrots (chopped)
  • 2 stalks celery (chopped)
  • 5 medium white potatoes (quartered)
  • 3 cups low sodium beef stock
  • 1/2 cup apple vinegar
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 325°F (160°C). In a large Dutch Oven, heat olive oil over medium-high heat.
  2. Season beef with salt and pepper, then brown in batches until caramelized; set aside.
  3. Sauté onions, garlic, carrots, celery, thyme, and smoked paprika in the same pot for about 5 minutes.
  4. Return beef to the pot; add apple vinegar and tomato paste, cooking for another 4-5 minutes.
  5. Stir in tomatoes and beef stock; add potatoes. Cover and bake for 3 to 3.5 hours.
  6. For an optional touch, add frozen green beans during the last 30 minutes of cooking.
