  • 4 lbs chicken parts (about 4 cups cooked)
  • 2 tbsp olive oil
  • 1 cup seedless grapes (halved)
  • 1 cup sliced almonds
  • 2 stalks celery (finely diced)
  • 3 scallions (thinly sliced)
  • 1 cup mayonnaise
  • Juice of 1 lemon
  • 1 tbsp Dijon mustard
  • 1 tsp Kosher salt
  • Freshly ground pepper
  • 2 tbsp dill (fresh, chopped)
  • 1 tbsp parsley (fresh, chopped)

Instructions

  1. Preheat the oven to 350°F. Rub chicken pieces with olive oil and season with salt and pepper. Place on a baking sheet and bake for 45-55 minutes until cooked through.
  2. Let the chicken cool, then remove skin and bones before chopping into bite-sized pieces.
  3. In a large bowl, mix chopped chicken with grapes, almonds, celery, scallions, dill, and parsley.
  4. In another bowl, whisk together mayonnaise, lemon juice, Dijon mustard, salt, and pepper until smooth.
  5. Combine the mayo mixture with the chicken mixture until just mixed.
  6. Refrigerate for at least one hour before serving to allow flavors to meld.
