Ingredients

Scale
  • 1/2 cup orange juice
  • 1/4 cup lime juice
  • 3 tablespoons olive oil
  • 34 minced garlic cloves
  • 1 tablespoon achiote powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon dried oregano
  • 2 teaspoons sea salt
  • 1/2 teaspoon ground black pepper
  • 3 pounds chicken thighs, legs, or breast
  • Lime wedges and chopped cilantro for serving

Instructions

  1. In a bowl, whisk together orange juice, lime juice, olive oil, garlic, achiote powder, cumin, coriander, oregano, salt, and pepper to create the marinade.
  2. Place the chicken in a resealable bag or bowl and pour the marinade over it. Ensure all pieces are well-coated. Seal or cover and refrigerate for at least 30 minutes (or overnight for best results).
  3. Preheat grill to medium-high heat or oven to 400°F (200°C). Cook chicken until golden brown and internal temperature reaches 165°F (75°C), about 40 minutes.
  4. Let the chicken rest for a few minutes before slicing. Serve with lime wedges and chopped cilantro.
