  • 250 grams Biscoff cookies
  • 75 grams unsalted butter
  • 907 grams cream cheese
  • 200 grams brown sugar
  • 50 grams granulated sugar
  • 120 grams sour cream
  • 240 grams Biscoff cookie butter
  • 1 tablespoon vanilla extract
  • 4 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C). Crush the Biscoff cookies into fine crumbs and mix with melted butter. Press firmly into the bottom of a springform pan.
  2. In a separate bowl, beat softened cream cheese with brown and granulated sugars until smooth. Mix in sour cream, cookie butter, vanilla, and salt until combined. Add eggs one at a time while mixing gently.
  3. Pour the filling over the crust and bake for about 60 minutes until slightly jiggly in the center.
  4. Allow cooling at room temperature before refrigerating for at least two hours or overnight.
  5. Top with Biscoff spread and crumbled cookies just before serving.
