  • 1 tablespoon cornstarch
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 1 medium onion, sliced
  • 1 bell pepper (red or green), sliced
  • 8 ounces mushrooms (shiitake or button), sliced
  • 3 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon honey
  • ½ teaspoon rice vinegar
  • 2 green onions, chopped
  • 2 tablespoons vegetable oil, divided

Instructions

  1. In a bowl, mix sliced chicken with cornstarch, salt, and black pepper until coated.
  2. Heat 1 tablespoon of oil in a skillet over medium-high heat and stir-fry the chicken until browned (4-5 minutes). Remove and set aside.
  3. In the same skillet, add another tablespoon of oil. Stir-fry onions and bell peppers for 2-3 minutes; then add mushrooms and garlic until tender.
  4. Whisk together soy sauce, honey, rice vinegar, and black pepper in a bowl.
  5. Pour the sauce over vegetables in the skillet, return the chicken to the pan, and toss everything together until heated through.
  6. Garnish with chopped green onions before serving hot over rice or noodles.
