  • ½ cup granulated sugar
  • 2 cups all-purpose flour
  • 8 ounces cream cheese (softened to room temperature)
  • 1 cup granulated sugar (for filling)
  • 3 cups blueberries (fresh or frozen; if using frozen, do not thaw)

Instructions

  1. Preheat your oven to 350ºF (177ºC) and line an 8" x 8" baking pan with foil.
  2. In a bowl, mix melted butter, sugar, flour, salt, vanilla extract, and lemon zest to form the crust. Press into the bottom of the pan.
  3. In another bowl, beat softened cream cheese with sugar until smooth. Add eggs, yogurt, lemon juice, flour, and salt; mix until combined.
  4. Fold in blueberries gently and pour the filling over the crust.
  5. Bake for 30-35 minutes or until edges are set but center slightly jiggles. Let cool completely before slicing.
