  • 1 cup unsalted butter
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 8 oz cream cheese
  • 3 cups blueberries
  • 2 large eggs
  • Fresh lemon juice and zest

Instructions

  1. Preheat your oven to 350ºF (177ºC) and line an 8” x 8” baking pan with foil.
  2. For the crust, mix melted butter, sugar, vanilla, salt, lemon zest, and flour until combined. Press into the baking pan and bake for 15 minutes.
  3. For the filling, blend cream cheese and sugar until smooth, then mix in lemon zest, eggs, yogurt or sour cream, lemon juice, salt, and flour. Gently fold in blueberries.
  4. Pour the filling over the baked crust and bake for an additional 45 minutes. Allow to cool completely before slicing into bars.
