  • 1 cup old-fashioned oats
  • ¾ cup all-purpose flour (or gluten-free flour blend)
  • ⅓ cup light brown sugar
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ½ tsp cinnamon (optional)
  • 6 tbsp unsalted butter (or coconut oil), melted
  • 1 tsp vanilla extract
  • 1 cup blueberries (fresh or frozen)
  • ¼ cup granulated sugar
  • 2 tsp cornstarch

Instructions

  1. Preheat oven to 375°F (190°C) and line an 8-inch square baking pan with parchment paper.
  2. In a large bowl, mix oats, flour, brown sugar, baking soda, salt, and cinnamon.
  3. Stir in melted butter and vanilla until crumbly.
  4. Press half of the mixture into the bottom of the prepared pan to form the base.
  5. In another bowl, toss blueberries with granulated sugar and cornstarch.
  6. Spread blueberries evenly over the oat base and crumble remaining mixture on top.
  7. Bake for 35-40 minutes until golden brown and bubbly.
  8. Let cool completely before cutting into squares.
