  • 4 yellow onions (thinly sliced)
  • 6 cloves garlic (minced)
  • ¼ cup dry white grape juice
  • 1 tablespoon fresh thyme (or use 1 teaspoon dried thyme)
  • 1 tablespoon fresh chopped rosemary leaves (or use 1 teaspoon crushed dried rosemary)
  • 1 teaspoon smoked paprika
  • 1½ cups apple cider
  • 1½ cups low sodium chicken broth
  • 2 bay leaves
  • 2 Granny Smith apples (cored and quartered)

Instructions

  1. Preheat your oven to 400°F.
  2. Season the beef shoulder with salt and pepper, then sear it in olive oil in a Dutch oven until browned on all sides.
  3. Cook sliced onions until softened; add minced garlic for aroma.
  4. Deglaze with grape juice, then stir in thyme, rosemary, and smoked paprika.
  5. Return the beef to the pot; add apple cider, chicken broth, and bay leaves. Bring to a boil.
  6. Cover and braise in the oven at 350°F for two hours.
  7. Add quartered apples; cover again and cook for another 30 minutes until tender.
  8. Let the beef rest before slicing; thicken the sauce if desired before serving.
