  • Salt and pepper to taste
  • 1 can (14 oz) coconut milk
  • 1 can (14 oz) diced tomatoes, drained
  • 1 tablespoon lime juice
  • 1/4 cup fresh cilantro, chopped (plus extra for garnish)
  • Steamed rice for serving

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Sauté chopped onion until translucent (3-4 minutes).
