  • ½ cup dry quinoa
  • ¾ cup water
  • ⅓ cup toasted nuts (walnuts + almonds)
  • 3 cups chopped broccoli
  • 1 medium honeycrisp apple
  • ⅓ cup crumbled sharp white cheddar (optional)
  • Dried cranberries
  • 2 ½ TBSP extra virgin olive oil
  • 1 TBSP apple cider vinegar
  • 1 TBSP dijon mustard
  • ½ TBSP honey
  • ¼ tsp sea salt (plus extra to taste)
  • ⅛ tsp freshly ground black pepper (plus extra to taste)

Instructions

  1. Rinse quinoa under cold water to remove bitterness. In a saucepan, combine rinsed quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 13 minutes until water is absorbed. Fluff with a fork.
  2. While quinoa cooks, toast nuts in a skillet over medium heat for about 5 minutes until golden brown.
  3. Chop broccoli into bite-sized pieces and dice the honeycrisp apple. Squeeze half a lemon over the apple pieces to prevent browning.
  4. In a bowl, whisk together olive oil, apple cider vinegar, dijon mustard, honey, sea salt, and pepper.
  5. In a large bowl, mix cooked quinoa with broccoli, apple chunks, toasted nuts, and cheese if using. Drizzle with dressing and toss gently until well combined.
