  • ¼ cup cornstarch
  • 1 cup milk
  • 2 large potatoes, peeled and chopped into ½-inch cubes
  • 16 ounces broccoli florets (fresh or frozen)
  • 1½ cups shredded sharp cheddar cheese
  • ½ teaspoon salt
  • ¼ teaspoon ground pepper

Instructions

  1. In a skillet over medium-high heat, melt butter and sauté the diced onion for about 3 minutes until softened. Add carrots, salt, and pepper; cook for another 3-4 minutes before adding minced garlic. Sauté for an additional 30 seconds.
  2. Stir in the potatoes and chicken stock; cover and bring to a simmer for about 10 minutes to soften the potatoes.
  3. Add broccoli florets; simmer until both vegetables are tender, approximately another 10 minutes.
  4. In a small bowl, mix cornstarch with milk until smooth; pour into the soup while stirring continuously to thicken.
