  • 4 oz semisweet chocolate, chopped
  • ¾ cup unsalted butter
  • ¾ cup granulated sugar
  • ½ cup light brown sugar
  • 3 large eggs
  • 1½ tsp vanilla extract
  • 1 cup all-purpose flour
  • ¾ cup cocoa powder
  • ¾ tsp salt
  • 6 oz semisweet chocolate, chopped or in morsels (for ganache)
  • ¾ cup heavy whipping cream
  • Fleur de sel, for sprinkling

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Melt semisweet chocolate and butter over low heat until smooth. Remove from heat.
  3. Stir in granulated and brown sugars, then add eggs one at a time, whisking after each addition. Mix in vanilla extract.
  4. In another bowl, sift together flour, cocoa powder, and salt. Gradually fold into wet ingredients until combined.
  5. Pour batter into prepared pan and bake for 20–25 minutes or until a toothpick comes out with moist crumbs.
  6. Cool completely before cutting into small squares or rectangles.
  7. Prepare ganache by heating cream until simmering; pour over chopped chocolate and stir until smooth.
  8. Coat each petit four with ganache and sprinkle lightly with fleur de sel.
