- 2 cups small pasta shape (dry)
- 24 ounces cherry tomatoes (halved)
- 4 cloves garlic (minced)
- 6 ounces mini mozzarella balls (halved)
- 1 ounce fresh basil leaves (chopped)
- 2 tablespoons olive oil
- 2 tablespoons apple vinegar
- Salt and pepper to taste
- For crunchy breadcrumbs: 2 slices sourdough bread
- 1.5 teaspoons olive oil
- 1 teaspoon garlic powder (optional)
- Cook the pasta in boiling water until al dente. Drain and set aside.
- In a large bowl, combine cherry tomatoes, garlic, shallot, mozzarella balls, basil, olive oil, apple vinegar, salt, and pepper. Toss well.
- Toast sourdough bread until golden brown. Process into crumbs and sauté in olive oil with optional garlic powder until crispy.
- Mix the cooked pasta and breadcrumbs with the salad ingredients. Adjust seasoning as necessary.
