Ingredients

  • 1 head garlic
  • 3 tbsp olive oil
  • 50 grams (1/4 cup) butter
  • 90 grams (1/3 cup) warm milk
  • 7 grams (2 1/4 tsp) active dry yeast
  • 1 tbsp honey
  • 200 grams (1 1/2 cups) all-purpose flour
  • 50 grams (1/2 cup) bread flour
  • 20 grams (3 tbsp) milk powder (optional)
  • 25 grams (2 tbsp) butter
  • 2 egg yolks
  • 1 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 200 grams (2 cups) mozzarella cheese

Instructions

  1. Roast the garlic by drizzling it with olive oil and salt, wrapping it in foil, and baking at 160°C (320°F) for about 2 hours.
  2. Make garlic butter by mixing roasted garlic with softened butter, parsley, and reserved garlic oil.
  3. In a bowl, combine warm milk, active dry yeast, and honey; let proof for 10 minutes.
  4. Mix the flours, sugar, optional milk powder, softened butter, salt, egg yolks, and yeast mixture to form the dough.
  5. Knead the dough for 15-20 minutes until smooth; let proof until doubled in size (about 90 minutes).
  6. Roll out the dough, spread garlic butter on top, sprinkle mozzarella cheese, roll tightly, cut into portions, and let rise again for another 30 minutes before baking at 175°C (350°F) for 20-25 minutes.
