  • 16 oz. coleslaw mix (cabbage and carrots)
  • 3 Tbsp. neutral oil (like avocado oil)
  • ¼ cup creamy peanut butter
  • ¼ cup soy sauce (or tamari)
  • 3 cloves garlic, minced
  • 2 Tbsp. honey
  • 1 Tbsp. freshly grated ginger
  • 1 Tbsp. rice vinegar
  • 1 tsp. sesame oil
  • Fresh cilantro and green onions for garnish

Instructions

  1. Prepare the peanut sauce by whisking together peanut butter, soy sauce, minced garlic, honey, grated ginger, rice vinegar, and sesame oil until smooth.
  2. Heat 2 tablespoons of oil in a non-stick skillet over medium-high heat. Cook the ground chicken until no longer pink; transfer to a bowl.
  3. In the same skillet, add remaining oil and sauté the coleslaw mix and grated carrots until tender-crisp.
  4. Add the cooked chicken back to the skillet along with the peanut sauce; stir to combine and heat through.
  5. Finish with sliced green onions and chopped cilantro before serving.
