  • 3 cloves garlic, minced
  • 1 bell pepper, diced

  • 1 cup shredded cheddar cheese
  • Cajun seasoning
  • smoked paprika
  • cayenne pepper

Instructions

  2. Add diced potatoes and stir well.
  3. Pour in stock until potatoes are submerged; bring to a boil.
  4. Reduce heat, add seasonings, and simmer uncovered for 20-25 minutes until potatoes are tender.
  5. Blend part of the soup for desired texture using an immersion blender or regular blender.
  6. Stir in heavy cream and cheddar cheese until melted.
  7. Taste and adjust seasoning as needed before serving hot.
