  • 10 oz rigatoni pasta
  • 1 cup heavy cream
  • 3/4 cup freshly grated Parmesan cheese
  • 1 tbsp Cajun seasoning (plus more to taste)
  • 2 garlic cloves, minced
  • 2 tbsp butter (divided)
  • 1 tbsp olive oil
  • Salt and black pepper to taste
  • 1/2 cup shredded mozzarella or Fontina cheese (optional)

Instructions

  1. Season steak tips with Cajun seasoning. In a skillet over medium-high heat, heat olive oil and 1 tablespoon of butter. Sear the steak until browned; remove from heat.
  2. In a large pot, bring salted water to a boil. Cook rigatoni until al dente per package instructions. Drain, reserving 1/2 cup pasta water.
  3. In the same skillet, melt remaining butter over medium heat. Sauté minced garlic until fragrant, then add heavy cream and bring to a gentle simmer.
  4. Stir in Parmesan cheese until melted; season with salt, pepper, and extra Cajun seasoning if desired.
  5. Combine rigatoni and sauce, adding reserved pasta water for desired consistency. Gently fold in seared steak.
