  • 1 1/2 cups dry Calrose sushi rice
  • 2 cups water
  • 1/4 cup seasoned rice vinegar
  • 8 oz imitation crab, chopped
  • 1 large avocado, sliced
  • 1/2 cup diced English cucumber
  • 1/4 cup Japanese mayonnaise
  • 2 teaspoons sriracha
  • Nori sheets (chopped)
  • Black and toasted sesame seeds (for garnish)

Instructions

  1. Rinse sushi rice in a mesh sifter until water runs clear. Cook in a rice cooker with water.
  2. Once done, spread the rice on a baking sheet and gently mix in seasoned rice vinegar while cooling.
  3. In a bowl, combine Japanese mayonnaise with sriracha to create spicy mayo.
  4. Dice imitation crab and cucumber; chop nori into small pieces.
  5. Assemble bowls by layering cooled sushi rice with crab, cucumber, avocado, and drizzle with spicy mayo. Garnish with nori and sesame seeds.
