  • 3 lemons
  • 2 cups granulated sugar
  • 1 1/2 cups water
  • 1/4 cup sugar (for coating)
  • Optional: 10 pieces melting chocolate

Instructions

  1. Slice the lemons thinly, about 1/4 to 1/8 inch thick, removing any seeds.
  2. In a large saucepan, combine water and 2 cups of sugar over medium heat until dissolved. Bring to a simmer.
  3. Add lemon slices to the syrup and reduce heat to low. Simmer for one hour, flipping every 15 minutes for even coating.
  4. Remove the slices with tongs and lay them on parchment paper to cool and dry for about 24 hours.
  5. Once dried, coat each slice in the remaining 1/4 cup of sugar.
  6. For an indulgent twist, dip in melted chocolate if desired.
