  • 1/4 cup powdered sugar
  • 1/4 teaspoon cinnamon
  • 1/2 cup mini chocolate chips
  • 1/4 cup granulated sugar (for rolling)
  • 1 teaspoon cinnamon (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream butter and sugar until light and fluffy (3-5 minutes).
  4. Beat in the egg and vanilla until well combined.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. In another bowl, combine ricotta cheese, powdered sugar, cinnamon, and chocolate chips for the filling.
  7. Roll dough into 1-inch balls and coat them with a cinnamon-sugar mixture.
  8. Arrange on a lined baking sheet and flatten slightly with the bottom of a glass.
  9. Bake for about 10-12 minutes or until edges are lightly golden.
  10. Allow to cool for 5 minutes before transferring to a wire rack; fill each cookie with ricotta mixture before sandwiching.
