  • 1 sheet shortcrust pastry (or 8 mini tart shells)
  • 2 large onions, thinly sliced
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 tsp sugar
  • 5 oz goat cheese, softened
  • 2 large eggs
  • 1/2 cup heavy cream
  • Salt and black pepper to taste
  • Fresh thyme for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Roll out the shortcrust pastry and cut into circles fitting mini tart pans. Press into greased pans, prick bottoms with a fork, and blind bake for about 10 minutes until just set.
  3. In a skillet over medium-low heat, combine olive oil and butter. Add sliced onions and sugar; cook slowly for about 20–25 minutes until they are deeply golden.
  4. In a bowl, whisk together eggs, cream, salt, and pepper.
  5. Distribute caramelized onions evenly in tart shells. Crumble goat cheese on top and pour egg mixture nearly to the top.
  6. Bake for 20–25 minutes until set in the center and lightly golden.
  7. Garnish with fresh thyme sprigs before serving warm.
