  • 2 pounds beef roast (beef round or chuck steak)
  • 1 tablespoon adobo seasoning
  • 3 tablespoons vegetable oil
  • 1 small onion (chopped)
  • 1 green bell pepper (chopped)
  • ¼ cup sofrito
  • 4 cloves garlic (minced)
  • 8 ounces tomato sauce
  • 1 pound potatoes (cut into pieces)
  • 1 large carrot (cut into pieces)

Instructions

  1. Cut the beef into 1-inch cubes and season with adobo, salt, and pepper.
  2. Heat vegetable oil in a large pot over medium-high heat; sear the beef until browned on all sides. Remove and set aside.
  3. In the same pot, cook onion, bell pepper, and sofrito for about 5 minutes until softened.
  4. Stir in garlic; cook for another minute.
  5. Add oregano, tomato sauce, water, olives, capers, bay leaves, and seared beef; stir to combine.
  6. Bring to a boil; reduce heat to low and simmer for 30 minutes.
  7. Add potatoes and carrots; cover and simmer an additional 30 minutes until beef is tender.
