  • 1 ¾ cups heavy cream
  • 1 cup mascarpone cheese (room temperature)
  • ⅓ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 ½ cups strong brewed espresso (cooled)
  • 1 package (about 7 oz) ladyfinger cookies
  • 1 ½ cups cherry preserves or pie filling
  • ½ cup fresh cherries, pitted and halved

Instructions

  1. In a large bowl, whip the heavy cream until soft peaks form. Add mascarpone cheese, powdered sugar, and vanilla extract; mix until smooth.
  2. In a shallow bowl, combine cooled espresso (and substitute amaretto liqueur with almond extract mixed with water).
  3. Quickly dip each ladyfinger into the espresso mixture and layer them in a 9×9-inch dish.
  4. Spread half of the mascarpone mixture over the ladyfingers.
  5. Spoon half of the cherry preserves over the cream layer and add fresh cherries.
  6. Repeat layers with remaining ingredients.
  7. Cover and refrigerate for at least six hours or overnight.
  8. Before serving, dust with cocoa powder and garnish as desired.
