  • 1/2 medium white onion (chopped)
  • 2 cloves garlic (minced)
  • 2 teaspoons ground cumin
  • 2 teaspoons dried oregano
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 30 ounces canned cannellini beans (pureed (2 cans))
  • 15 ounces canned cannellini beans (drained and rinsed)
  • 15 ounces canned diced tomatoes (drained)
  • 4 ounces canned green chilies
  • 15 ounces canned creamed corn
  • 15 ounces canned whole kernel corn
  • 15 ounces canned black beans
  • 1 whole rotisserie chicken (shredded)
  • tri-color tortilla strips
  • lime juice

Instructions

  1. Heat olive oil in a stock pot over medium heat.
  2. Sauté chopped onions and minced garlic until translucent.
  3. Stir in ground cumin, oregano, salt, and pepper.
  4. Add pureed cannellini beans, drained beans, diced tomatoes, green chilies, creamed corn, whole kernel corn, black beans, and shredded rotisserie chicken. Mix well.
  5. Reduce heat and let simmer covered for 30 to 45 minutes.
  6. Serve hot with tri-color tortilla strips and a squeeze of lime juice.
