  • 2 cups fresh spinach
  • 8 ounces cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil, divided
  • 1 tablespoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut chicken breasts in half horizontally into cutlets; pound to an even thickness.
  3. In a bowl, mix olive oil, minced garlic, Italian seasoning, salt, and pepper. Marinate chicken for 15-30 minutes.
  4. Sauté spinach in olive oil until wilted (about 2-3 minutes).
  5. Mix cream cheese with sautéed spinach and half of the mozzarella.
  6. Remove marinated chicken from fridge; optionally sear each cutlet briefly.
  7. Arrange chicken in a greased baking dish; spread cream cheese mixture over chicken and top with remaining mozzarella.
  8. Bake for 20-30 minutes until golden brown and cooked through.
